    Wacky Cake

    To say times are strange right now is the understatement of the century. I’ve struggled with finding a sense of normalcy. My type-A, control freak personality doesn’t fare well when things are out of my control. I also thrive on routine, as do my kids, so we’re working hard to find a new normal (but wouldn’t it be so, so nice to get back to *actual* normal??). This morning I woke up and thought about how lucky that we are to have found milk and eggs recently, and that I should try to ration them. Not only so that we don’t need more so soon, but so that those who need them can get them, too. Then it hit me: Wacky Cake.

    Sangria Cake

    There’s something about sangria. For me, it’s right up there with a mimosa, comfort-wise. Having sangria means I’m out, which is a treat. It also means that I’m taking my time and relaxing (or at least trying to). I love sangria in the summertime. As such, of course I had to make it into a summertime dessert! 😀 This Sangria Cake is a taste of summer for sure!

    Vanilla Cake with Berry Buttercream

    I do a lot of baking with berries in the summertime…because BERRIES! I typically use them a topping (as opposed to baking them), because they’re just so darn good as-is! This time I decided to leave the (beautiful, roll-your-eyes good) berries for snacking. I used freeze-dried berries for this gorgeous Vanilla Cake with Berry Buttercream.

    Banana Coconut Cake

    You can never have too much dessert. At least that’s what I tell my husband when he comes home to yet *another* of my creations that the picky man won’t eat. 😉 We have a vacation coming up (yaaaaaay!!!), and my anticipation of our trip had me thinking of tropical flavors. In this case, a Banana Coconut Cake!

    Chocolate Peanut Butter Cake

    My husband doesn’t have much of a sweet tooth. I know. It’s shocking, especially considering that he’s married to ME. That said, there are a few sweets that he will gladly accept. Of those his absolute favorites are chocolate peanut butter. As such, it was fitting to make a great big Chocolate Peanut Butter Cake for his birthday (like I do every year). 🙂

    Chocolate Champagne Cake

    Champagne makes me think of one thing: celebrations. Champagne is the traditional beverage to serve at any celebration: birthdays, weddings, retirements…you name it. We all know that life is unpredictable. That you make plans that ultimately get thrown out the window because…life. So it got me thinking about how celebrations might not need to be only for the big milestones in your life. Maybe sometimes you should celebrate that it’s Thursday. For your next celebration, of any kind, I would serve this Chocolate Champagne Cake.
