    Raspberry Pistachio Tartlets

    The bounty of summer berries is always inspiring me for new ways to use them! I saw some gorgeous raspberries, and of course my brain immediately started pairing them with other delicious flavors. Pistachios, honey, vanilla…the resulting creating was these delicious Raspberry Pistachio Tartlets!

    It’s blackberry season! I mean, it’s every-berry-season, but poor blackberries just don’t get the same hype as strawberries. But…I’ll be honest. Blackberries aren’t my favorite.     Mini Chocolate Chip Cookie Cups

    You know the saying: when it rains it pours? It’s been way too true at my house. Such is life! The fam and I were totally taken out by the flu last week. Not one of those 24-hour bugs, oh no. It’s taking each of us a full week to get healthy again. As soon as my three-year-old kicked that bug, it was an ear infection. My husband was out of town for work. Kids extracurriculars and Valentine’s Day parties (and the required mom contributions that go with them) added to the mess… None of that has anything to do with these Mini Chocolate Chip Cookie Cups (filled with cheesecake mousse!). They just help explain why it took me so long to get the recipe posted here. Sorry about that. Better late than never, right?

    Chocolate Salted Caramel Hazelnut Tartlets

    The sun is finally shining again in Texas today! I should be baking something up and using the fabulous light to take some pretty pics for the blog (my photography is a work in progress, and a lack of natural light doesn’t help).  Instead, I’m getting another recipe on the blog and binge watching Gilmore Girls (I’ve never watched it! Can you believe it?) This recipe is delicious and decadent: Chocolate Salted Caramel Hazelnut Tartlets.

    I’ve been on a bit of a salted caramel kick lately. You know what? I haven’t received a single complaint about it. Not a one. I think this recipe concludes my string of salted caramel recipes, at least for the time being. 😉

    Mini Lemon Meringue Pound Cakes

    I have some serious lemon lovers at my house. My husband (Adam) and oldest son (James) both loooove lemon. Oftentimes I see lemon recipes and make them because I know those two will absolutely love it. In the case of these Mini Lemon Meringue Pound Cakes, it was more than just their love of lemon that got me on board. I’ve never seen a recipe quite like this, and that says a lot! I was intrigued, and now I’m pleased to say I have a batch of these delicious little beauties on my kitchen counter.

    Chocolate Raspberry Tartlets

    I have a collection of bakeware that rivals most HomeGoods stores. Not really, but I’m close. Packing to move (twice in four months!) made this painfully obvious. Over the years, I’ve accumulated quite the collection of both standard and specialty baking pans (and specialty baking ingredients, but that’s another post). Even with a (slight) purge of my inventory when we moved, I still own SEVEN different sizes/shapes of tart pans. Among them, a set of teeny, tiny, 2.5-inch tart pans.

    I made use of some of the smallest tart pans in my collection (like these [here]) to make these adorable baby Chocolate Cream Tartlets with Raspberry Meringue. They’re so cute I can’t stand it. I *love* mini desserts. Then again–what’s not to love about a sweet pastry crust filled with dark chocolate custard and topped with raspberry meringue?
