If you do any amount of baking, you inevitably end up with a recipe that leaves you with leftover egg yolks. If you have leftover egg whites, you always have the option of having an egg white omelet or two (or check out my post on Ways to Use Egg Whites), but you don’t have that option with the yolks. Here are some ideas to help!
I’ve gathered here a list of my recipes that use two or more egg yolks, so you have a go-to spot to figure out what to do with the ones you have sitting in your refrigerator. I’ve separated the recipes below by number of egg yolks used, just to make it that much easier to navigate the recipes based on the number of egg yolks you have to use up.
2 Egg Yolks
If you have two egg yolks sitting in your fridge, this Homemade Challah is the perfect way to use them up! Chewy, eggy, and soft, this bread was made for breakfast glory.
This Blueberry Curd Tart is the perfect way to use up a few yolks! Plus, that COLOR!! <3
3 Egg Yolks
These Strawberry Almond Tartlets have a sweet vanilla almond crust filled with velvety strawberry curd, all topped in toasted meringue! Lemon curd gets all the attention, but these tarts will make strawberry curd your new obsession!
This Coconut Pineapple Tart has a coconut crust filled with homemade pineapple curd! Topped with pineapple “flowers,” this beauty is a tropical dream dessert!
4 Egg Yolks

5 Egg Yolks

6 Egg Yolks
A unique take on a fruit tart, this Apple Maple Custard Tart has a classic pastry shell filled with maple custard and topped with fresh apples! Don’t worry about the apples browning! I have a (quick and easy) trick in the recipe that keeps them looking perfect!
These Cereal Milk Tartlets have a funfetti blondie crust filled with Lucky Charms cereal milk pastry cream, all topped with homemade vanilla bean whipped cream! <3
These Blood Orange Curd Tartlets have beautiful flavor, look gorgeous, and will use six egg yolks! These gems have sweet pastry filled with blood orange curd and topped with Swiss meringue buttercream and chopped pistachios.
This Classic Fruit Tart has an orange-scented sweet pastry filled with vanilla bean pastry cream. While those components are completely delicious on their own, it’s even better topped with a rainbow of fresh fruit!

Those aren’t black olives you see (like my husband thought they were 😀 ), those are beautiful Italian maraschino cherries! This Black Forest Pie has a chocolate pastry crust filled with dark chocolate cherry custard and chopped maraschino cherries, topped with fresh whipped cream, grated chocolate, and more cherries. Decadent and delicious!
