What is Angel Food Cake?
Angel food cake is a type of sponge cake typically made in a tube pan. Its primary ingredients are whipped egg whites, cake flour, and sugar. The resulting cake is tall, light, white on the inside (unless I've flavored it otherwise!), and browned to perfection on the outside.
Tips for the Best Angel Food Cake
Mastering angel food cake is within reach even for a new baker following these easy tips! You'll impress your family and friends with your mastery of this fantastic dessert!
There are just a few rules that you need to follow for best results:
- Use Cake Flour - he texture of the cake won't be right (or could collapse completely) if you use another type of flour. Make sure the flour is well sifted before using it, so that you can avoid lumps.
- Make Sure your Bowl and Whisk are Spotless - Even a drop of egg yolk or other fat and your whites won't whip up!
- Whip the Egg Whites Sufficiently - The egg whites are the only leavening in the cake, so you need to make sure they beat up as fluffy as possible! Using fresh, room temperature egg whites will give you the best results. I don't recommend using boxed egg whites.
- Be Gentle - You need to be veeeeery gentle when folding in the dry ingredients, so as to not deflate your egg whites!
- Do NOT Grease the Pan - Greasing the pan for an angel food cake will make it more difficult for the cake to rise in the pan, and your cake will likely collapse!
- Cool the Cake Upside Down - Angel food cakes are so light, they must be cooled upside down to prevent collapse after baking! Angel food cake pans have small feet on them that allow you to invert the pan. If you do not have feet on your pan, invert the cake pan on a wire rack to cool.
